The best rows in the vineyard are hand-picked so that only superb quality fruit is selected. Following a light press the juice is put into French oak barriques for fermentation. The wine is aged on its lees with occasional stirring over 10 months. A blind tasting barrel-by-barrel early in the New Year decides the Heaven’s Selection cut and these wines are left in barrel for an extended period to enhance harmony and give a Sauvignon Blanc with richness and wonderful texture.
