Blanc de Noir Brut (Sparkling)

Grapes were both hand picked and machine harvested. Parcels were selected for our Blanc de Noir across our vineyard sites to bring interest to the wine. Gentle handling pressed off to settle in tank before being inoculated with differing strains of yeast. The wine was carefully blended to bring purity and freshness to the wine. The base wine was then put through secondary fermentation in tank before being bottled. Blanc de Noir isa French term for making a sparkling wine with clear colour from red grapes. Gentle pressing of the grapes minimizes colour pick up from the skins.

Delicate pretty florals entwined with honey and sweet berry fruits.

Indulging custard apple, stewed fruits and yellow-fleshed plum fill the palate. Balanced beautifully with sweet spice.
